Diced Vegetables
Vegetable Juices, Inc. has been serving the food industry for over 70 years providing high quality products for industrial ingredient usage. One of the popular product lines we offer is fresh, diced vegetables packed in a brine-type system. Diced vegetables are available in many different sizes, and many different brine systems including vinegar, lactic or citric acid in combination with salt, sugar, and other water activity controlling agents. The resulting product will be either refrigerated or ambient stable.
Advantages
- Flavor – VJI's diced vegetables are made from fresh produce and as a result have a fresh, natural flavor. Diced particulate can act as a natural flavor encapsulation system generating a burst of flavor in a finished product.
- Texture – VJI's diced vegetables deliver crisp texture and have a twelve month shelf life in salad dressings. Fresh produce (not frozen or dehydrated) delivers a much better texture to your product through a brine delivery system.
- Color & Particulate Identity – VJI's diced vegetables have a natural color of the vegetable with a piece identity that is consistent and uniform. Dehydrated diced vegetables have been known to lose their color or bleed color into the finished product.
- Microbiological & Enzymatic Activity - Diced vegetables using fresh produce under the oversight of good manufacturing procedures and the pH/water activity control of the brine, help deliver a product that has low micro counts. These low counts can help extend the shelf life of many products.
- Convenience – Diced vegetables in a brine system are easier to handle than its fresh, dehydrated or frozen counterparts (less waste as well). The product can be pumped into any liquid system without concern for rehydration or thawing issues. Any material left over can be refrigerated until the next production run.
- Cost Effective - Brine systems deliver sufficient shelf life to allow material to be produced during preferential market conditions that can translate into significant cost savings to our customers.
