Vegetable Purees

Vegetable Juices, Inc. has been serving the food industry for over 70 years providing high quality products for industrial ingredient usage. One of the more popular lines we offer is our Vegetable Puree line. These purees are milled from fresh produce resulting in a consistency similar to applesauce. There are many advantages that vegetable purees offer to our customers.

Advantages

  • Flavor – We start with fresh produce and process it in a closed system. The whole flavor profile of the vegetable is retained from the fresh top notes of the juice to the deeper flavor notes contained in the fiber of the vegetable.

  • Microbiological – Vegetable purees are made from fresh clean vegetables and are pasteurized. The result is a product that is microbiologically very clean. This characteristic can help extend the shelf life of many applications that the vegetable purees are used in. The pasteurization stops the enzymatic activity of vegetable purees that can negatively affect flavor, color or viscosity over a finished product’s shelf life.

  • Texture – Purees are used not only to deliver a premium flavor to a product system, but also to contribute significant, natural body and texture to a product system. Purees can be manufactured to deliver a wide range of particle sizes that vary from a very fine size with a liquid consistency, to a very large size with a very pulpy material.

  • Color – There are many colorful vegetables. Certain flavor systems can use vegetables for flavor, in addition to gaining the benefit of the natural color that is present from that vegetable. Think about carrot or red peppers as an example.
