Lemongrass Puree

A traditional flavoring in Thai and other Pacific Rim and Caribbean cuisines, lemongrass proffers an intriguing hint of citrus without the lemony bite. Refreshing and light with a hint of ginger, one would never suspect such a delicate flavor was so difficult to process for commercial use. Lemongrass is a true tropical grass with plenty of fibrous matter. So despite its popularity and intriguing flavor, lemongrass was an impractical commercial ingredient until today.

Vegetable Juices, Inc., is the only commercial supplier in North American of fresh, pureed processed lemongrass.

VJI Purees provide fresh flavor, natural color, and texture to formulas. Our purees are pasteurized to control enzymatic activity and microbiological counts. A variety of particle sizes are available.

Description of Product:  This product is prepared from fresh, sound lemongrass that is cleaned, pureed with salt, vinegar and citric acid and then refrigerated.
Label Declaration:  Water, lemongrass, salt, citric acid, and vinegar.
Packaging:  5-gallon poly pails, 40 lbs. net wt.; Liquid pack poly lined fiber drums, 440 lbs. net wt.
Shipping and Storage Temperatures:  Keep under refrigeration at 35 to 40 degrees, relatively dry conditions, no condensation.
Shelf Life:  6 months
